Why a GIF can look banded, and what dithering does
A GIF frame can hold at most 256 colours, while a phone photo routinely uses tens of thousands. Each frame here gets its own palette, built from that frame's colours, so a slideshow of unrelated photos is not forced to share one compromise table.
Smooth gradients such as skies are where 256 colours show: the gradient turns into visible steps. Dithering scatters the rounding error across neighbouring pixels so the steps blend back into a gradient. The cost is file size — scattered noise is exactly what GIF's compression handles worst — which is why it is off by default.
Images with 256 colours or fewer, such as logos, screenshots of flat interfaces and pixel art, are stored exactly, with no colour change at all.
Frame timing that browsers actually honour
GIF stores each frame's duration in hundredths of a second. Browsers treat a delay of 0 or 0.01s as 0.1s, so an animation asked to run as fast as possible plays slower than one set to 0.02s. Durations here start at 0.02s, the shortest delay browsers play as written, so a 25fps loop (0.04s a frame) is possible.
Frames are sized from the first image, with the longest side capped at the size you pick and never enlarged. Images with a different shape are either fitted inside the frame on a background colour of your choice, or cropped to fill it.
